Enzima cu activitate muramidaza actionand asupra degradarii peretilor bacteriilor lactice (Gram +).

Vin alb:

• Intarzie actiunea bacteriilor lactice, reduce cerinta in SO2.

• Reintarirea actiunii SO2 in vinurile albe si imbunatatirea stabilitatii microbiologice.


Vin rosu:

• Evita pornirea precoce a FML pe tescovina in momentul maceratiilor lungi (fermentatii alcoolice incete sau oprite).
